The upside of my dishwasher being broken for three weeks was discovering Smitten Kitchen’s one sheet Chicken Tikka Masala. Without a dishwasher, I needed to reduce the endless dishes that go through my kitchen in a given day. Out of desperation and horribly dry, chapped hands, I started googling one sheet pan dinners.
One of the best recipes I found was this amazing Chicken Tikka Masala. It’s easy to make and my family loved it. It was so good that the easy one sheet clean up was an after thought.
I love when the easiest recipes are the best. Marinate the chicken. Cover a half sheet pan in foil with oil (that rhymes), place chicken, cauliflower, and potatoes on the pan and you have a killer dinner in 40 minutes. The Tikka Masala itself is flavorful and delicious. I serve it over basmati rice because when the opportunity presents itself to serve a carb on top of a carb, I’m all over it.
This week’s menu offers Chicken Tikka Masala, the world’s best Turkey Burgers, a Korean beef, and Ottolenghi’s Pasta with Zucchini. It’s an amazing week of food ahead and each dinner option is loaded with brilliant flavor.

The turkey burger to end all turkey burgers. My husband took one bite and said, “WOW!” Who wouldn’t want a great burger loaded with tons of zucchini, herbs, and spices? I serve it over salad with a creamy sumac sauce.
