It’s hard to believe that kids around the country are back in school. Here in California, we have a few more weeks of summer fun. With both kids back from summer camp, we are enjoying lazy mornings and long summer days. I love rolling through our days with no real plan. Soon enough, we will be on the clock and adhering to the strict schedule of carpools, homework, and after school activities.
For now, we are living in the beauty of suspended reality. Today we went to the beach to boogie board, had an afternoon swim, and went out for sushi. It’s so good to be with my family and enjoying this time together. It’s our version of a “staycation.”
This week, I picked a few favorites for dinner. A perfect seasonal pasta that is bursting with summer flavor, Marcella Hazen’s beloved roasted chicken, Williams Sonoma’s perfect fish tacos, and a great Asian flavored beef round out this week’s meals.
I wish you lazy summer days and delicious meals this week.
Enjoy!

There are a million ways to make fish tacos and this version does it right. All the elements come together to make this a perfect taco: grilled fish, crema, and a good crunch from the veggies.

One of Marcella Hazen’s most beloved recipes: Chicken with 2 Lemons. A classic dinner that will feed your family and hopefully offer leftovers for lunch the next day.

Marinated Asian Steak is one of my favorite ways to make meat. Skip the sweet slaw and add rice and Sesame Asparagus. If you want to really knock it out of the park, add Potstickers.
