I plan dinner to keep myself organized and my family happy. If I have a dinner ready to go, everyone is appreciative and no one complains. If I sift through menus for delivery, everyone jumps in, offers opinions, and a heated debate ensues. Inevitably, someone is disappointed because they didn’t get their pick. As a parent, I’ve learned that making executive decisions gets things through committee faster. I don’t need a nightly debate on who wants what for dinner. My meal planner is my version of an executive decision.
Since I’m newly obsessed with cauliflower rice, I gave Gwyneth Paltrow’s Cauliflower “Fried Rice” a whirl. I’ve made it a few times and love it. If you are late to the cauliflower rice party (like I was), it isn’t rice at all. Cauliflower rice is simply cauliflower that has been pulsed down to the size of rice. It makes a great Meatless Monday or a perfect side dish.

Turns out, Cauliflower Fried Rice isn’t rice at all! It’s actually cauliflower that’s been pulsed down to the size of rice. Gwyneth Paltrow gifts us with my new favorite stir fry recipe. I didn’t have the coconut or the tahini on hand so I added 2 Tablespoons of soy sauce and it was great. My kids loved it, too!
