The countdown is on and we are just days away from the big game – Halloween! The houses on my street are decorated, the kids are finishing their costumes, and I’m trying not to eat my way through all of the candy I bought for the Trick-or-Treaters.
Even though we have a big night on Monday, everyone still needs to eat. On Halloween, I make sheets of pizza for the crowd at my house. It’s the perfect grab-and-go dinner for the kids before they head out for Trick or Treating. I like this pizza for a group because all you do is bake them off when your guests arrive. I included this delicious pizza on the menu this week. Just a head’s up: if you are making the dough from scratch, pull everything together (dough and sauce) on Sunday because the dough needs to chill for 24 hours.
Since Halloween is on a Monday this year, Lily’s school has a late start on Tuesday. I’m as excited for the late morning as the kids are for the candy! I’m hoping the extra sleep on Tuesday will help her (okay, me) bounce back a little faster. Along with a little extra sleep on Tuesday morning, my menu planner is loaded with easy dinners that will help your family recharge. Enjoy a satisfying Lentil Soup, a perfect Roast Chicken, and Marcella Hazen’s famous Pasta Bolognese.

This beautiful pizza is a great grab-and-go dinner for your Trick-or-Treaters! I make sheets of this on Halloween and everyone loves it. Note: if you are making homemade dough, pull the dough together on Sunday (because it needs to chill 24 hours) and bake it off just before serving on Monday.
