Happy Memorial Day Weekend!
This weekend is all about relaxing, seeing friends, and firing up the BBQ! My plan is to suspend reality for the weekend and pretend summer is here. On the agenda is sleeping in (anything past 6:30 am is a win) and hanging out with my family. It’s been one of those crazy weeks. We’ve all been running in different directions and it will be nice to have some downtime together.
While this weekend will be a little preview of summer, the reality is the next few weeks are a grind. The kids have homework, end of year projects, and finals. Even during these busy times I still make sure we have dinner together and take a break from the craziness.
I love this week’s ideas for dinner! Great recipes for Turkey Stuffed Peppers, Spring Mac & Cheese (with pancetta and peas), Chicken Teriyaki, and a comforting Meatloaf are all here for you.
Enjoy!

Monday
Make it through Monday knowing the best Turkey Stuffed Peppers are for dinner. Serve with a big green salad and great bread for a perfect dinner.

Seriously, Gaby Dalkin has me fired up for Tuesday if I get to end the day with her Spring Mac & Cheese. Did I mention it has peas and pancetta?

My favorite Chicken Teriyaki is so good (and easy) you may never order it in a restaurant again. Serve with Sesame Asparagus and make everyone’s day with Potstickers.

Comfort food at its best with Alton Brown’s famous meatloaf. Serve this with mashed potatoes and Roasted Broccoli for a winner of a dinner.
