This week’s menu is perfect for anyone who is looking for restaurant quality taste on a weeknight schedule. There may be a mad dash after school to get my kids where they need to be, but each night we hit the pause button and share dinner together. I always try to have something on the table that appeals to the kids and this week, I think the kids will be very happy.
This week I’m offering a Pasta with Sun Dried Tomato Pesto, a Spring Minestrone with Meatballs, Sesame Salmon, and my favorite Asian Marinated Steak. It’s going to be an awesome week of food! I’m planning on making extra of everything to pack up for lunches the next day. I have a weekly feature on Instagram called “Lily’s Lunch.” Follow me on Instagram for Lily’s lunches and so much more!

Get out of your dinner rut with this inspired Pasta with Sun Dried Tomato Pesto. This recipe turns the classic pesto upside down with a base of Sun Dried Tomatoes. The sun dried tomatoes lends delicious flavor and texture. The basil brightens the pesto and makes for a perfect sauce.

Any one else have a case of SPRING FEVER? Get your spring soup on with this Spring Minestrone with Chicken Meatballs. PRO TIP: use dark chicken meat and make your own chicken stock. I like dark meat because the fat adds flavor. The homemade chicken stock makes all the difference!
