It’s another amazing week of dinners coming your way! With meals like Tuscan Chicken, Pasta Carbonara, and Pasta with Sausage, Artichokes, and Sun Dried Tomatoes, I have Italy on the brain. Over lunch, a friend shared her summer plan to visit Rome, Venice, and the Amalfi Coast. I’m pretty sure thoughts of Italy influenced this week’s menu.
Last summer, my husband and I traveled to Rome for a few days and basically ate our way through the city. Our restaurant list was provided to us by one of our most discriminating food friends and his suggestions did not disappoint. His list was full of restaurants that offered classic Roman dishes like Pasta Carbonara, Pasta all’Amatriciana, and Cacio E Pepe. Between pasta stops, we refreshed over gelato and strolled the streets of Rome.
After Operation: Leave No Bite Behind, we drove to Positano where the food was equally delicious albeit lighter fare. With cities perched high above the sea, think lots of fresh seafood and and light pastas with fresh, local ingredients. We lingered over 3 hour lunches with bottles of rosé and dips in the sea between courses.
It may be awhile before I get back to Italy. Lucky for me, I have special dishes like my Pasta Carbonara and Ina Garten’s Tuscan Chicken to transport me back to one of my favorite places. Food is magical that way. It brings special memories to life in just one bite.
