This week’s menu has a few of my favorite things: Steak Sandwiches, Roasted Tomato Soup, Nachos, and a flavorful chicken with pancetta and bell peppers. If I’m lucky, I will have leftovers from a few of these meals to turn into lunches.
I am a master of repurposing food so I’m already thinking about the amazing salads that will be made out of the left over Steak Sandwiches and Nachos Bar fixings. Throw the steak and peppers over arugula and toss the nacho bar fixings with romaine or iceberg lettuce for a great salad. The options are endless!

This tomato soup has such great flavor because you roast the tomatoes. They caramelize and add the best flavor to this soup. Throw in some grilled cheese sandwiches and you have an awesome summer dinner.
