It’s all about March Madness over here. Unfortunately, my pick for the NCAA tournament is out of contention. That means it’s back to my regularly scheduled program: dinner! Even though my team is out, there is still a lot of basketball left to watch. Aside from being a great family activity, I think the best part of the tournament is rooting for the underdog teams. Who doesn’t love a Cinderella Story?
With event television it’s all about the food, right? I love having a good dinner ready to go when we watch the games. While my bracket is busted, my meal plan is firmly in place. Here’s what’s happening for dinner this week:
- Monday - This Asian Salmon from Ina Garten is a home run. A side of rice with fresh asparagus and dinner is served. View Recipe
- Tuesday - Giada’s Chicken Piccata hits the spot. I love that its restaurant quality taste overshadows the fact that it’s a breeze to pull together. A perfect weeknight dinner. View Recipe
- Wednesday - My husband’s favorite dinner is my turkey stuffed peppers. I made this for him during a “no carb” kick. It’s so good that it’s now in regular rotation around here. Oh, and bonus: the leftovers make the best lunch. View Recipe
- Thursday - Perfect meatballs, anyone? These are fantastic and pasta is the delivery system of choice for all of that beautiful sauce. Is it Thursday yet? View Recipe
