I hope you all had a great Thanksgiving! This is such a fun time of year filled with family, friends, and delicious food. It’s hard for me to stay in my routine with the kids because I would rather be ice skating, decorating cookies, and wrapping gifts! Pretty much anything over carpool, sports practice, and school! Anyone else feel the pull of the holidays over real life?

I’m pretty excited for weeknight meals that are so cozy and delicious! Who wouldn’t want to come home to a comforting bowl of Lentil Soup, a tasty BBQ Chicken Sandwich, a perfect bowl of Pasta Carbonara, and our favorite Turkey Burgers? Mom Tip: I make extra turkey patties for the weekend. They make great snacks on-the-go!

Enjoy your week and this special time of year.

This is the soup that got my kids hooked on lentils. They love these simple, satisfying lentils. Use homemade Chicken Stock or for Meatless Monday, Vegetable Stock. These are perfect with a flavorful, crispy Crostini.

This isn’t labor intensive but does take some time in the oven. Plan ahead for the most delicious BBQ Chicken Sandwich. Serve with the most delicious Corn Soufflé.

    Spaghetti Carbonara

Pasta Carbona for a midweek win. Since I can’t get to Rome, I’m bringing Rome to us. Enjoy this classic Roman dish in the comfort of your own home.

Turkey Burgers loaded with herbs, seasoning, and zucchini! Tons of flavor packed into a light turkey patty. I make extra patties and grab them for an afternoon snack or lunch.
