My weeks are jammed packed with family, my blog, and life as a full time Baking & Pastry Arts student. In order to get through the week without spontaneously combusting into flames and burning out, I plan ahead. I organize everything and that includes meals. I aim to hit the grocery store once or twice a week so that the ingredients are in my house and ready to go. This way, when I fly through the door between school pick ups and basketball practice, I have everything I need to make a great dinner.
Check out what I am up to in the kitchen this week and start planning your menu. Go ahead, get after it!
Monday
Gaby Dalkin knocks it out of the park with her addictive Baked Lemon Cod. Rice and a side of my Roasted Broccoli makes for a perfect “We Crushed Monday” dinner.

Is there anything more gratifying than a beautiful roast chicken coming out of the oven? Your house smells like heaven and you can’t beat the ease of roasting your veggies in the pan with the chicken. Perfect, elegant, easy weeknight meal. Oh, and the left over chicken? Going right into Wednesday night’s dinner.

I’m big on repurposing food. The chicken from last night? Rolling it right into my enchiladas. A side of Mexican Red Rice and a salad makes us good to go for Survivor night.

Oh, hello pasta night! Lucky for me this comforting bolognese will be a snap to pull together while I’m shuttling kids to various activities all over town. Pass the garlic bread and a green salad, please.
