Anyone else feel like the school year is a marathon and we are just reaching for the tape? It’s not even May and I already have the worst case of summer fever. The mom in me gets lost in the summer fantasy of no alarm clocks, no carpools, and no homework. The foodie girl in me has visions of berry pies, soft skinned fruits, and fresh corn on the cob. All of that will have to wait. Those summer indulgences are on hold for another six weeks. For now, I need to push thoughts of fresh fruit cobbler aside and help the kids finish out the school year.
This week I have great dinner ideas for you. My favorite Sesame Chicken, a hearty Spaghetti and Meatballs, a delicious lentil soup, and a festive Cinco de Mayo extravaganza are waiting for you. Have a great week and enjoy!

This Sticky Sesame Wing Chicken is a staple at my annual Super Bowl Party. My kids love it so much that I started making it for dinner. Serve over rice with a side of Sesame Asparagus or Roasted Broccoli.

My favorite Lentil Soup is so easy and delicious. This is a recipe I share with friends who are looking to introduce something new to their families without putting them too far out of their comfort zone. It’s always a hit.

Cinco de Mayo! I always offer tons of options like Tostadas, Mexican Rice, and Taquitos. Any excuse to eat more Mexican food, right?
