You know that moment that changes everything? One day, the store manager at my local market called out to me, “See you tomorrow, Leslie.” It was a friendly enough thing to say, but I cringed. It was like he was in on my shameful secret: I was so disorganized that I was at the store every single day. I was to the grocery store what Norm was to the bar on Cheers! Everyone from the butcher to the produce manager knew me because I was there so often. I would dash into the store like a crazed game show contestant grabbing what I could while trying to beat the clock and make it to school pick up. I caused myself so much unnecessary stress by racing to the market each day without a plan. As a mom, a full time student, and blogger, I needed to be more organized and less frazzled. Don’t we all?
The solution was simple: outline meals for Monday thru Thursday. My shops would be scheduled and strategic. After talking to friends who were always scrambling for last minute dinner ideas, I decided to share my weekly meal plan with you. I hope my menu helps you get organized and inspires you to try something new.
Ready? Let’s do this.
Monday
We are crazy about this delicious stir fry. It’s quick to pull together and so insanely good. My kind of Monday meal.

My kids can’t get enough of this salmon. I always make a little extra for lunches the next day. I’ll make white rice (because Lily loves it) and a side of either broccoli or green beans.

Jake asked for a pasta this week and he loves pancetta. This ought to hit the spot after basketball practice. I round out this dish with a green salad.

Lentils are one of my most favorite foods. Lucky for me the kids are crazy about them, too. This soup is always a hit and with a rustic bread it’s a perfect meal.
