The best part of a weekly menu is that it gives me a taste of what’s ahead. Obviously, I’m pretty food focused, and dinner happens to be my favorite meal. I’m so obsessed that I’ve been known to overcome the late afternoon slump by thinking about what’s for dinner. Thoughts of bean and quinoa chili, taquitos, “pizza chicken”, and pork tenderloin have me fired up for the week ahead. Here we go!

I love a Meatless Monday dinner that doesn’t scream Meatless Monday. This satisfying chili is loaded with beans, quinoa, and spices. Fingers crossed for leftovers so I can enjoy it for lunch the next day.
