Menu Week of April 4th

The best part of a weekly menu is that it gives me a taste of what’s ahead. Obviously, I’m pretty food focused, and dinner happens to be my favorite meal. I’m so obsessed that I’ve been known to overcome the late afternoon slump by thinking about what’s for dinner. Thoughts of bean and quinoa chili, taquitos, “pizza chicken”, and pork tenderloin have me fired up for the week ahead. Here we go!

    We call this “pizza chicken.” It’s a great departure from your average weeknight chicken and delivers all the flavor of pizza. Can we just have a moment on the crispy pancetta sprinkled on top of the chicken?

    Having this recipe in my arsenal makes weeknight company a breeze. I’ll marinade the meat overnight, sear it, and roast it. A side of potatoes and Roasted Broccoli  and I’m all set for guests. The hardest part will be remembering to marinade the meat overnight!
