This menu is so good it will snap you out of your Easter Sunday candy hangover. Each day has something totally delicious to offer like the perfect lentil salad, spring chicken and vegetables, my favorite salmon, and a pizza night. Let’s get started!
Monday
Meatless Monday is covered with Ottolenghi’s Lentil Salad. I was surprised to learn my kids are as lentil obsessed as I am. For Jake, I dial down the onions and omit the cheese. Otherwise, I serve this over a bed of arugula with a nice bread and everyone is happy.
Tuesday
Spring has sprung! This chicken with roasted vegetables celebrates the season. This perfect dinner offers a restaurant worthy presentation. Oh, did I mention it only uses one pan? Perfect for weeknight cleanup. High fives all around.

Sesame Salmon is a no brainer for me. My entire family loves it, it’s an easy weeknight meal, and if you are lucky enough to have leftovers, it makes a great lunch. I always serve this with rice and a green vegetable.

Pizza night is always a hit. We are stepping up our pizza game in a major way with mushrooms and pancetta. I may get the kids in on the action and have them help out with the dough and toppings. I’ll serve this with a big green salad.
