Admittedly, I’m a hard boiled egg snob. Learning the basics of cooking is essential. Getting simple things right, like hard boiled eggs, are game changers and elevate your food. When you have just a few ingredients in a dish, you want your building blocks to be at their best and that means taking the time to get things right. You wouldn’t want to build a house on a faulty foundation, right? So let’s get the basics down. That means using the freshest ingredients available and preparing them in a way that brings out the very best in them.

I need perfectly cooked hard boiled eggs or I just skip the whole thing. My standard is pretty simple – no green ring around the yolk. The dreaded green ring develops when the egg is overcooked. When the egg is overcooked, the texture changes and the egg becomes rubbery, hard, and ultimately, flavorless.

I always have hard boiled eggs on hand. They make a perfect snack whether on the go or after a workout. I like them best sliced in half with a sprinkle of kosher salt. I add them to salads, kids’ lunches, and use them as the foundation for classic egg salad. They were a life saver in getting my husband through Whole 30 and are usually in my bag when I board a plane for a satisfying snack. When done right, they are the perfect food.

A note about fresh eggs: they are harder to peel. Store bought eggs work great for making hard boiled eggs and are much easier to peel. If you have fresh eggs, wait a few days so that they are easier to peel.

Enjoy!

Creating a breakfast masterpiece feels impossible on early morning school days. I’m usually so tired that I’m not sure if the stretchy workout pants I pulled on while half asleep are inside out. The truth is, it doesn’t matter because I’m not going to workout anyway. The stretchy workout pants are out of respect for my kids who begged me to stop wearing pajamas to school drop off.

You know those images of moms dressed in a nice outfit and serving the perfect breakfast to their children before school? That’s not me. Breakfast at my house is more like Survivor meets the Amazing Race. The kids are lucky to get a bite to eat between dragging themselves into the shower, searching for their socks, and stuffing last night’s homework into their backpacks. It’s not a pretty picture but that’s the real deal on mornings in my house.

Making mini frittatas came out of the guilt I felt watching my kids shovel dry cereal into their mouths day after day. Long gone were the September mornings of getting them off to a strong start with beautifully scrambled eggs, fresh fruit, and piping hot breakfast sausage. It dissolved into the kids choosing between the blue box, the yellow box, or the white box. I knew things had to change when my kids started asking questions like:

“Ugh. Cereal again?”

“Isn’t breakfast the most important meal of the day?”

Oh, and the dreaded, “Didn’t you go to culinary school?”

These lovely little frittatas will get you out of your weekday breakfast rut and totally change up your breakfast game. They are a killer make-ahead breakfast option that taste à la minute. These gorgeous Mini Frittatas are loaded with delicious chicken apple sausage, onion, spinach, and tomato. These mini frittatas will change how you and your kids feel about breakfast!

Enjoy!

This is a great make ahead breakfast. I make a big batch of Breakfast Burritos and freeze them for busy weekday mornings. We are out the door every morning by 7:15 am. There is little time for a proper breakfast but my kids still need to eat. I grab one of the personalized burritos, heat them up, and they have a perfect breakfast ready to go!

These burritos are easy to personalize for each member of the family. The great thing about setting up an assembly line of ingredients is that you can easily add in or leave out ingredients to your child’s liking. If one of your kids doesn’t eat cheese, skip it! Wrap up the burrito, label it (if freezing), and you have a great breakfast ready to go!

Start layering ingredients.

Don’t overstuff the burrito or the tortilla will tear.
