Happy Mother’s Day! The brunch of you dreams is coming your way! This is the kind of special menu that is memorable and will satisfying everyone on your list. A huge platter of Nicoise Salad makes a dramatic appearance along with some family favorites like mini frittatas, asparagus, and of course, bacon! There is pretty much something for everyone on this drop dead delicious menu.

Add a few sweet treat like my favorite Strawberry Banana Smoothie, to-die for Monkey Bread Muffins, and the show stopper of the day, a gorgeous Country Cake with fresh berries! Oh, and don’t forget bunches of my favorite flowers, peonies. Moms dig peonies.

Roasted Asparagus is a staple on my spring brunch menu. This easy side is a must on the buffet next to eggs and salmon. 

Roasted Bacon has to happen for me for weekend breakfast. Roasting is my favorite way to prepare bacon – perfectly crisp bacon and easy clean up? Sign. Me. Up. 

Mini Sausage and Vegetable Frittatas are lovely and delicious. Everyone loves the individual servings and you won’t believe how easy these are to make. This is a great make ahead item!

Avocado Toast is everywhere but no one does it better than What’s Gaby Cooking. Make mom happy and check out her spring versions for serious brunch inspiration.

 

Salmon Nicoise Platter is a gorgeous addition to a weekend brunch! Put out a huge platter of perfectly plated salmon, potato, green beans, eggs, and tomato with a lovely mustard dressing. Mom will thank you. 

Strawberry Banana Smoothie is perfect for the kids and the grown ups! Easy enough to whip up and a nice pop of pink on the buffet looks perfect for mothers’ day. Think about a big pitcher of this yummy drink or use mini glass dessert cups with fun striped straws!

Monkey Bread Muffins are always a hit. This recipe is basically a love letter to the biggest monkey bread fan on the planet, my son Jake. 

Country Cake with Berries is the big TA-DA moment at brunch. Make this easy cake, whipped cream, and loads up your layers with gorgeous, colorful, sweet berries. Always a hit. 

Banana Bread is always a good idea. Simple is best but only when done right like this moist, flavorful banana bread!

This is pretty much the Easter brunch of my dreams! Can you imagine walking a buffet table filled with a gorgeous Glazed Ham, Frittatas, the perfect Potato Stacks with just the right amount of parmesan and thyme, Roasted Asparagus, and a savory bread pudding loaded with sausage and cheddar? Where do we even start?

I love the idea of adding a special drink to the menu. My kids have this luscious and sweet Banana Strawberry Smoothie on replay these days and it’s the perfect Easter Sunday smoothie. I would make a big pitcher for a serve-your-self situation or fill a platter with little mini glasses with cute straws filled with this colorful smoothie. Either way, it makes the buffet pop with a vibrant burst of pink color!

I am finishing out this special brunch with a few of my go-to hits for sweet treats. Check out my Chocolate Dipped Oreos dotted with pastel sprinkles, Monkey Bread Muffins in tulip paper cups, and Mini Cheesecakes with Graham Cracker Crusts served in mini mason jars. You can swap out the Oreos for sweet berries or even colorful edible flowers! So cute and festive!

When I create a brunch spread, I always add in a big green salad and a beautiful platter of fresh seasonal fruit. It rounds out the meal perfectly and is a nice crutch for those of us who believe too much food is just enough!
