BBQ Chicken Sandwiches
Total time
- 1 whole cut up fryer chicken
- kosher salt
- pepper
- 2T Vegetable Oil
- ½ onion, sliced
- 4 whole cloves garlic
- 1 large bottle BBQ Sauce
- Hawaiian Rolls
- hamburger pickles (optional)
- cole slaw (optional)
- Preheat oven to 300 degrees.
- Pat chicken dry. Season each piece with kosher salt and pepper.
- Heat oil in heavy pot over medium heat. Sear chicken until golden brown on all sides.
- Remove chicken from pot.
- Pour off excess grease. Leave about 1 T.
- Add sliced onions and garlic. Cook for 2 minutes. Don't burn.
- Pour in bottle of BBQ sauce.
- Put chicken in sauce. Cover with lid.
- Cook in oven for 1½ hours or until chicken falls off of bone.
- Once cooked, remove chicken and garlic from pot.
- When chicken is cool enough to handle, remove skin and shred chicken.
- Skim fat off of the top of the sauce.
- Add chicken back to sauce and combine. Warm if necessary before serving.
- Spoon chicken onto Hawaiian Rolls.
