BBQ Chicken Sandwiches

Ingredients
  • 1 whole cut up fryer chicken
  • kosher salt
  • pepper
  • 2T Vegetable Oil
  • ½ onion, sliced
  • 4 whole cloves garlic
  • 1 large bottle BBQ Sauce
  • Hawaiian Rolls
  • hamburger pickles (optional)
  • cole slaw (optional)
Instructions
  1. Preheat oven to 300 degrees.
  2. Pat chicken dry. Season each piece with kosher salt and pepper.
  3. Heat oil in heavy pot over medium heat. Sear chicken until golden brown on all sides.
  4. Remove chicken from pot.
  5. Pour off excess grease. Leave about 1 T.
  6. Add sliced onions and garlic. Cook for 2 minutes. Don't burn.
  7. Pour in bottle of BBQ sauce.
  8. Put chicken in sauce. Cover with lid.
  9. Cook in oven for 1½ hours or until chicken falls off of bone.
  10. Once cooked, remove chicken and garlic from pot.
  11. When chicken is cool enough to handle, remove skin and shred chicken.
  12. Skim fat off of the top of the sauce.
  13. Add chicken back to sauce and combine. Warm if necessary before serving.
  14. Spoon chicken onto Hawaiian Rolls.
