Homemade Tortilla Chips

Serves: 60 chips
- 1 cup oil (canola or vegetable)
- 10 corn tortillas
- kosher salt
- Line sheet pan with paper towels.
- Cut each tortilla into 6 triangles.
- Heat oil over medium high heat. Do not allow oil to smoke or exceed 350 degrees.
- Once oil shimmers, add corn tortilla triangles in batches. Do not over crowd the pan.
- Fry about 2 minutes per side. Fry until crisp and lightly brown on both sides.
- Remove chips from oil and place on sheet pan lined with paper towels.
- Season with kosher salt.
