Turkey Burgers

Serves: 9-10 patties
- FOR THE TURKEY BURGER
- 1 lb ground turkey
- 1 large zucchini, grated (about 1½ cups)
- 3 Tablespoons green onion, minced
- 1 egg (lightly beaten)
- 1 Tablespoon chopped mint
- 1 Tablespoons chopped cilantro
- 1 small garlic clove, minced
- 1 teaspoon salt
- ½ ground black pepper
- ⅛-1/4 teaspoon cayenne
- vegetable oil for frying
- FOR THE SAUCE
- ½ cup sour cream
- ¾ cup plain greek yogurt
- 1 tsp grated lemon zest
- 1 Tablespoon lemon juice
- 1½ Tablespoon sumac
- ½ teaspoon salt
- ¼ teaspoon black pepper
- For the sauce, combine ingredients, adjust seasonings if needed, and set aside.
- For turkey burger, gently combine all ingredients (except oil) in a bowl.
- Form meat into 2.5 ounce patties. Patties will be wet.
- Chill for 15 minutes.
- Use enough oil to cover bottom of pan and sear patties on medium high heat about 5 minutes per side or until cooked through. Add oil if necessary.
