Ingredients
  • FOR THE TURKEY BURGER
  • 1 lb ground turkey
  • 1 large zucchini, grated (about 1½ cups)
  • 3 Tablespoons green onion, minced
  • 1 egg (lightly beaten)
  • 1 Tablespoon chopped mint
  • 1 Tablespoons chopped cilantro
  • 1 small garlic clove, minced
  • 1 teaspoon salt
  • ½ ground black pepper
  • ⅛-1/4 teaspoon cayenne
  • vegetable oil for frying
  • FOR THE SAUCE
  • ½ cup sour cream
  • ¾ cup plain greek yogurt
  • 1 tsp grated lemon zest
  • 1 Tablespoon lemon juice
  • 1½ Tablespoon sumac
  • ½ teaspoon salt
  • ¼ teaspoon black pepper
Instructions
  1. For the sauce, combine ingredients, adjust seasonings if needed, and set aside.
  2. For turkey burger, gently combine all ingredients (except oil) in a bowl.
  3. Form meat into 2.5 ounce patties. Patties will be wet.
  4. Chill for 15 minutes.
  5. Use enough oil to cover bottom of pan and sear patties on medium high heat about 5 minutes per side or until cooked through. Add oil if necessary.
